NATURAL BEGINNINGS

My food journey starts as a young boy growing up on my parent’s farm, in the townland of Carrick, co. Tipperary.  Having that strong connection to the land and traditions instilled in me a sense of belonging, family, community, and a strong work ethic. We were self-sufficient growing our own vegetables, raising chickens, pigs, and busy dairy farm producing our own fresh milk every day. It was heaven. I remember my grandmother making apple and rhubarb tarts not forgetting her famous soda bread. What a feast bacon and cabbage was. I can still see the balls of floury spuds that peeled themselves on the dinner table. I remember the long summers and saving the hay, running over the field with the wicker basket filled with bottles of hot sugary tea wrapped in yesterday’s newspaper to keep them hot, a collection of assorted mugs & oceans of ham salad sandwiches and fresh fairy cakes to keep my dad, grandad and neighbours refuelled in the afternoon sun. This was bliss, this was a typical country life.

STOUT CITY LOAF

At Carrick foods, we have created our unique loaf recipe and approach to this time-honoured tradition of bread making. Our Stout City loaf is created using the finest grade flours combined with the natural sweetness of rich caramel scented dried fruits. To contrast this we sourced a locally crafted creamy oyster Stout made using the famous Lough Foyle Irish flatbed oyster native to the North West of Ireland to produce our Stout city loaf. 

To ensure we respect the art of bread making we at Carrick Foods, simply combine & craft great natural ingredients to create a bread with a select set of flavours unique to the North-West of Ireland. The secret lies in the craftsmanship and his respect for this time-honoured tradition. Finally, we package each loaf ensuring it reaches you just the way it should.

CURED SALMON WITH LEMON & DILL

At Carrick foods, we have created our unique recipe and approach to this time-honoured tradition. Our gravlax is created using the finest grade hand-chosen sides cured using our exclusive recipe of salt dill & sugar. It is then left to absorb for just the right amount of time.  

To ensure the handcrafted traditions at Carrick Foods, we prepare each salmon by hand with a generous layer of our cure which gives it a superior set of flavours unique to the North West of Ireland. The secret lies in the craftsmanship and his respect for this beautiful King of fishes. Once cured we finished each fillet with an extra helping of dill that deepens & enriches the salmon. Finally, we hand carve and package each portion ensuring its reaches you just the way it should. The result is luxurious, rich, soft & tempting, that’s ideal for all occasions.

A little History 

Gravlax is a popular Scandinavian dish. During the Middle Ages, it was made by fishermen, who salted and lightly fermented the salmon by burying it in the sand above the high-tide line. This may be where it got its name, as 'grav' in several Scandinavian languages means grave, and 'lax' or 'laks' means salmon. Nowadays it's no longer buried but cured.
